Grilled Lime Steak with Spring Vegetable Salad

Whoever said salad is rabbit food never tried this delicious Grilled Lime Steak with Spring Vegetable Salad! This fresh and tasty dish is as hearty as it is healthy. It is sure to please even the biggest – and pickiest – eaters in your family!

Ingredients

Grilled Steak Salad:

1 1.2 pounds lean sirloin steak
1/2 cup freshly squeezed lime juice
1/2 teaspoon sea salt
1/2 teaspoon pepper
1 cup sliced cucumber
1 cup cherry tomatoes, halved
1 cup sliced radishes
1 cup arugula
2 cups chopped lettuce
1 cup baby spinach
1/2 cup toasted pumpkin seeds
1 1/2 avocados, diced

Salad Dressing:

2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
3 tablespoons balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon raw honey

Directions

Mix freshly squeezed lime juice, sea salt, and black pepper.

Spread the lime juice mixture over the lean steak until well-coated.

Grill the steak on a grill for about 10 minutes per side or until cooked through and golden brown.

Then transfer the steak to a plate, wait 5 minutes for the juices to settle, and slice.

Combine all the dressing ingredients in a jug and shake to combine well.

Combine cucumber, cherry tomatoes, radishes, arugula, lettuce, spinach, and pumpkin seeds in a large bowl and pour in the dressing. Toss in toasted cashews and avocado until well combined.

Divide the salad among serving bowls.

Top each serving with grilled steak and enjoy your Grilled Lime Steak with Spring Vegetable Salad!
